Frequent Flyer Miles!!

That is what I should be getting.  If I would have been a tad bit brighter I would have signed up for them before starting college.  I’ve traveled all over the US and I have no goodies to show for it…damn! 🙂

I am currently taking a small study break to write this post and finish up my grading from the weekend.  I only have 35 more days of grading ad answering snotty emails and I could not be more thrilled.  Teaching WAS NOT meant for me.  I enjoy people one-on-one but putting me infront of 20 students who don’t care is the fastest way to watch me go crazy.

I have one mid-term tomorrow then I’m off to pick up my poster (no type-os PLEASE!!!!) and pack.  By 3:30 Thursday I plan to be on my way down to Boulder to get a yummy dinner and an early bedtime for my 3:00am wakeup on Friday inorder to make my 6:15am flight to Chicago (UGG!)

But after that I am on to sun and more relaxing times  🙂

Week#4 – picture of your meal from today

At the risk of being repetitive…..I LOVE EGGS!  I had some for breakfast this morning after I got  home from the dentist ( i love that clean feeling, if I am ever a millionaire I may schedule mini-cleanings every few weeks).

My favorite way to eat eggs with over-easy with some spice and a toasted something (usually an english muffin).  And it was yummy.

Interesting side note:  I had a teacher during my undergrad that was adamant about eggs being the cheapest, complete food available.  This is the most bang for your buck.  I would have to agree.  Eggs fill me up, their are cheap, and it is one of my main sources of protein.  YUM YUM.  Eggs got a bad rap for a long time when people first became aware of cholesterol and it is true, egg yolks do have a lot of cholesterol.  That being said if someone is careful about the rest of their diet as well (lower meat consumption) they should be just fine.

Week #3 – A picture of the star from your favorite food show

This was a hard on for me.  I enjoy the Food Network so much (check out their magazine for some of the best recipes).  All of the show have great chefs who make amazing meals, but honestly most of their shows are too hard for me to watch.  But one that I can watch…

Alton Brown

His show is very entertaining and a learning tool as well.  He actually has no formal training to be a chef, his education is in film production (which if you watch his show you’ll understand).  But he was working for a TV food show and was bored to tears with their presentation, told everyone he could do better, and the rest is history.  He makes great food, you’ll learn history/science/trivia, and its pretty funny.

But….if I am to choose my favorite chef it would be…..

Jamie Oliver

His food is so good, but his show is not so entertaining.  I love his cookbooks.  The food is interesting, simple ingredients, and his is a huge supporter of healthy living and eating.

 

As for me I have an Colorado Avalanche game this weekend!!!!

A Wise Friend Once Said…..

Hey Everybody!

So as the title of this post suggests my wise, and very beautiful, bff Brianna thought it was quite amusing that I attempted to commit myself to daily posts.  What can I say…she knows me better than I know myself.  Well this time I am going to take her advice and attempt to change the 30 Day Challenge to the 30 week challenge lol.  That is to say I am going to stick with the topics and the direction but she gently reminded me that a weekly post was a more reasonable commitment.  So…thanks Nana.

A few quick updates:

  • Never made it to Houston.  During my connection in Phoenix, AZ the airport in Houston canceled all flights due to a “predicted” 3 inches of snow.  Needless-to-say I was frustrated and a little confused.  I am beginning to wonder if I will mesh well with Houston lifestyle and attitude.
  • Full steam ahead on the thesis.  I have a set date to defend!!!! April 13th.  Normally I wouldn’t get excited about this because my thesis dates tend to shift, but I was put into a schedule that was sent SCHOOL WIDE!  I think my advisor has to stick with it now.
  • I believe there is a Colorado Avs hockey game in the very near future.
  • My thesis topic was accepted to a dietetic conference in Chicago, IL for March 11th.  Again, I wonderful honor and opportunity but now….more travel and preparation are needed.
  • I am DONE DONE DONE with internship applications!!!! Nothing feels better.  Now I am holding my breath until April 2nd.
  • New favorite few songs from the Jane Dear Girls and Hayes Carll.
  • My Food and Culture class is rocking my world.  In a great way.  I have been giving a lot of thought to a few life directions in my life and I am reading a ton.  I’ve always enjoyed learning more.

Week #2 – A picture with the person who makes your favorite feel-good meal

Haller to all the great mom cooks out there!!!  My mom is an awesome cook but she is not the winner of this honor.  My step-dad Mark makes the most AMAZING eggplant parmesan in the world.  Hands-down my favor home-cooked meal.  Its even one of those recipes where he literally read me the directions and helped me over the phone and my dish came out so gross.  But something about his talent with this dish…..mmmm.  I might have to con him into making it again soon. (when I was away during undergrad he made it almost everytime I came home….those where the days lol).

EPIC FAIL!!!!

Seriously, who sets up a post series like that and then doesn’t post for a few days.  Again I’m gonna blame grad school (wonder what I am going to do when I no longer have grad school to blame my slowness on?).  This week has been crazy.  My classes are in full swing which is meaning a lot of grading lately.  I am also doing a guest lecture at the hospital here in Laramie (3 total lectures) on physical activity and how it can help control and eliminate type 2 diabetes.  I am super excited and it was an honor to be asked (even though I secretly love talking about the nutritional side of diabetes more).  But as with most wonderful things in life they always happen in the same 2 week span.

I am also packing for Houston as I type.  I have never been before but the dietetic internship I am most interested is having an open house, so I am going to go win them over with my personality and smile 🙂  I also have one of my best friends from high school down there and I am SO excited to visit with here and meet her future MR!  So excited for her, but it is a bummer I will be missing the engagement party by a FEW HOURS!  Just my luck, but I’m lucky to be visiting at all this time of year.  Wait until you see the “plane list”, maybe I’ll post that tomorrow for you guys.

Ok, so I’m starting (seriously I am) and once I start this is a daily commitment.

10 facts (exercise/food if possible)

  • My undergraduate degree was in dietetics/nutrition and my graduate degree (THIS MAY!) is in exercise science. (Bet it makes sense why I am obsessed with both now huh?)
  • I am dying to run in the Disney half marathon (can’t this year, too close to thesis due date) but you get to wear a pink tu-tu as you run.  AMAZING!!!
  • I love everything about being a Cougar and going to WSU was everything I wanted out of college BUT….running in the palouse (think very flat, rolling hills) doesn’t even compare to running with the view of the mountains in Laramie.
  • I could eat eggs at every single meal.  I love them every way they are prepared.  (I don’t eat them everyday, but I could)
  • I am a huge nerd when it comes to learning what the general public is hearing about nutrition (something a teacher once introduced) so I read the popular diet books and learn about trends online just so I know what they are learning as well.
  • I am really nervous about maybe moving to Houston during this summer for the dietetic internship.  I don’t do well in humidity, guess its time to buck up.
  • Cooking is relaxing for me, I love it.  It is hard for me to understand why people dread it.
  • I really want to learn how to grill better.  I don’t own a grill  now, but I want to purchase one and I love how things taste grilled.  I have no idea how to go about learning proper grilling.  Advice?
  • Zumba maybe the hardest workout I’ve ever made myself do.  Not in terms of effort but in terms of letting yourself look silly.  Jamie really wanted to go so I agreed and I am so glad I did.  We now work out and laugh for atleast 3 hours a week.
  • I was embarrassed in my class last night when my professor was talking about how American’s only spend 1/4 of their extra income on food.  (I easily spend 50% or more)  But after thinking about it a little more eating new/good tasting food makes me happy, and I enjoy it and lets face it I’ll never change.  🙂

New Day, Same Story

So…..another break, sorry.  I really do want to make blodding more regular, but lets be honest I have very little exciting things to blog about and spare time is not exactly something I have a lot of. 

On a very positive note I am about 3/4 the way through my thesis!  I am about to finish up the stats and write the results.  My boss claims a post-spring break defense, I sure hope that its accurate.

I am leaving next thursday to visit the dietetic internship I am appling to in Houston TX!  I am very excited, this trip should confirm whether I will keep Houston as my #1 choice. (the dietetic process is very screwy, very screwy.  infact if I wasn’t 90% finished with the process I would seriously consider not putting myself through months of anxiety)  Well that and I am pretty much a freak about food and all things to do with food. 🙂

And in that spirit, a conversation with Nana last night as inspired me to attempt homemade New England Clam Chowder.  I have no idea what night I will get enough time for this, but it will be happening and soon.  I’ll be sure too take down the recipe if its any good and get a picture.  (I swear I really am trying to make this a wonderful blog lol).

Update!

No I’m not dead, just un-commited lately.  But one of many of my New Year’s goals is to come back to blogging more regularly.  But to catch up without going into novel-type length I’ll stick with bullets and pictures.

  • I have offically proposed my thesis!!!! Now before anyone gets too excited this is only the first step, but my defense is right aroud the corner, meaning….I pretty much have to just pass my class this semester and I will receive my master’s.  SUPER EXCITED!!
  • Frank and I went to Washington State University (GO COUGS!!) for the Apple Cup game, but mostly it was an excuse to show him where I went to school and a chance to visit with friends.
  • Frank also gave me THE BEST BIRTHDAY GIFT EVER!!!  A picture to come once I take it (any guesses?)
  • My extended family made the trip out here this winter which was a very nice change of pace.  It is so fun to show people the real tough life of Wyoming (hehehe).
  • I am currently working on finishing my applications to internships.  I have narrowed it down to four, which seems financially doable ( keep your fingers crossed)
  • I started running again (thank goodness, I am maintaining that it was the fault of my thesis).  And I am hoping for a pretty light spring semester and with any luck hopefully an early summer half-marathon.  Any suggestions?
  • Got two AMAZING cookbooks for christmas, of which I know you will see some highlighted dishes once I try them.
  • Two rodeos to attend in the next two weeks.  I am loving the enviroment and I have actually been back on a horse twice within this fall.  It’s really fun and a much more peaceful and exciting experience than I remember from my childhood.
  • Am doing a bit of undercover motivation to get Frank to a bareback riding school this spring.  It’s something he’s always wanted to try and I just know he’ll love it and the entire experience will be so fun for the two of us.  It’s been a long time since supporting someone else is important and exciting to me.
